Ingredients (makes approximately 20 cookies)
- 250g unsalted butter
- 125g golden caster sugar
- 2tsp vanilla extract
- 375g plain flour
- 1 flat tbsp cocoa powder
- 350g fondant icing
- Pink, yellow and black gel food colourings
Method
- Preheat oven to 160°C (gas mark 2/325°F).
- Line 2 large baking trays with baking paper. Place the butter, sugar and vanilla extract into a large mixing bowl, then whisk together with an electric whisk until pale and fluffy.
- Sieve in the flour and cocoa powder. Whisk again until the mixture comes together to form a dough. You may need to pull the dough together with your hands as it can be quite crumbly.
- Roll the dough out on a lightly floured surface to around 1cm thick. Cut into shape using an ice lolly or popsicle shaped cookie cutter, then trim off the end of the stick shape to get the right length for Mrs Weaver’s feet.
- Repeat until you have used all the dough, then carefully transfer to baking trays and bake for 10-15 minutes.
- Once cooked, remove cookies from the oven and leave to cool completely on the baking trays.
- To decorate, first divide the fondant icing and colour as follows: leave 20g as white, colour 20g yellow and 20g black. Colour the remaining fondant light pink, then remove 40g of the pink fondant and add extra colouring to make it a darker pink for Mrs Weaver’s belt.
- Roll the light pink icing out and cut into shapes using the same ice lolly cookie cutter you used for the cookies.
- Trim off the end of the stick shape and cut across to form Mrs Weaver’s trousers, then cut semi-circles from the top of the trousers to allow the biscuit to show through for her hands. Cut another piece for the top. Roll out and cut thin strips of dark pink icing for the belts. Add the trousers to the cookies, then the belts, then the top pieces, pressing down gently to stick them to the cookies. Cut tiny yellow triangles and add them to decorate the tops.
- Cut thin strips of white fondant into pieces for the teeth and add them to each cookie. Cut two small circles from the left over light pink fondant for her snout, then squeeze them into tear shapes and add over the teeth. Cut tiny circles of white fondant for her eyes and add above the snout. Roll small balls of black fondant and press them into place for the nose. Finish by adding dots of black gel food colouring to the eyes.
